The Trapets Are Magicians

The Trapets have been Biodynamic since 1998. 30% of the grapes are de-stemmed. The grape skins are soaked in their juice for 3 weeks. The wines are bottled without filtration after 15-18 months. This Gev-Cham 2010 starts with a beautiful color. Pour yourself a little and tilt the glass over a white surface to see a transparent ruby from the past. The first smell is of delicious savory red berries. 2010 is like 2009 for good ripeness levels, releasing smells of raspberry jam in this wine. The taste is dry with red berry tea flavors and minerals. The flavor has a wow factor; this is what red berries aspire to be. How can a winery convert the sugar of grapes into alcohol and still retain the taste of the grapes? Amazing!
