It's amazing how differently Sauvignon Blanc can express itself in different terroirs. This version comes from the lesser-known Loire region of Quincy. It is remarkably aromatic. This dry, unoaked white is made (as the name says) from very old vines.

Pairing Advice

Why is this such a delicious Sauvignon Blanc? To begin with, the grapes that go into it come from vines that are over 80 years old. Burrowing into the incredibly mineral-rich soil of the far eastern Loire valley, these vines pick up all the tangy, rocky flavors of the earth and transmit them through a medium of citric, lime-y, ripe Sauvignon Blanc. Make a batch of quinoa and chill it for an hour. In the meantime, roast some sliced almonds and chop a yellow pepper as well as a hefty bunch of cilantro. Mix the cool quinoa with your chopped pepper, almonds, and cilantro, and dress the finished product liberally with fresh lime juice, olive oil, salt, and pepper.
