In the late 1960s Paolo Marolo was just a student of viniculture, on a mission to advance winemaking and innovate for the future of the famed Langhe region of Italy. Less than a decade later, Paolo and his brother, started the Santa Teresa Distillery out of his family home in Mussotto d'Alba. Their goal, to distill only single-variety grappa to showcase the noble vines in Piedmont. Using pot stills against the trend of industrial column stills and aging in barrels made from native Acacia wood, amplifying the terroir and capturing the true spirit of the Piedmont. In 2007 Santa Teresa Distillery celebrated its 40 year Aninversary. Paolo Marolo is recognized across the world as "Maestro Grappaiolo." Paolo still works in the distillery today, which is now helmed by the next generation, his son Lorenzo.
