Who says you can't pair white wine with red meat? One of the most dynamic and innovative food/wine combinations I have experienced in recent memory involved this very wine with beef carpaccio, salmon roe, & burrata cheese. I know it sounds crazy, but it was fantastic!! Chenin Blanc is one of my all-time favorite white grapes, partly because of its versatility. The grape itself responds to many different methods of wine making, from bone dry styles to rich, honeyed & long-lived dessert bottlings. Domaine Huet is one of the benchmark producers of Vouvray. This particular style of wine is characterized by high acidity which balances its honeyed notes and richness. Pair it with something unconventional & it might turn into a delicious memory for you too.
