In the mid-20th century, the Verdejo grape almost became extinct. But it was saved by the development of tourism in Spain, no matter how strange it sounds. Tourists from the beaches of Mallorca and Costa Brava needed something fresh and crisp. And Verdejo became that hero. In the 1970s, big Spanish producers began developing a new style of white wine based on Verdejo with the help of French oenologist Émile Peynaud. This wine is now a globally recognized representative of the Verdejo grape and the Denominación de Origen Rueda. That wine is full of citrus notes, stone fruits and has a fantastic minerality.

Pairing Advice

Free-run juice from pre-phylloxera vines! This wine is both densely flavored and incredibly fresh. Peachy and tropical, it may remind you of Sauvignon Blanc: cheerfully fruity, but with a bone-dry finish. Serve with flaky white fish such as halibut, sole, turbot, or tilapia, oven-roasted and topped with a relish of green and red peppers, cilantro, lime, and red onion. Herbaceous notes in the wine and ripe flavors on the palate will play off of similar flavors in the dish.
