Pairing Advice

This wine has loads of elegance and finesse for a number of reasons, not the least of which is that these 80-year-old Mencía vines are grown on incredibly steep terraced slopes. Unoaked, unfined, and unfiltered, this juice is chock full of pulpy, dark fruit that really pops in the mouth with a nice burst of acid and mineral. This wine was made for fatty pork-based dishes. Great with meaty fare like pork belly and pâté, or try it with goat cheese and crusty bread.
