Camut 12 Yr. Calvados

Adrien Camut's style is unmistakable. His Calvados, and he releases bottles ranging from 6 yrs to well over 50 yrs, always keeps brilliance and intensity and expresses pure, apple-y flavor. His family has been distilling in the region since the 1800s, and uses old oak and estate fruit solely. This 12 yr is rich and cidery. The aromas of apple skin and tart baked apples still take the forefront, as it goes in good Calvados. Caramel, brown butter, baking spices, and a developing rancio nuttiness round out the palate. Something to consider: Camut only leaves his barrels 2/3-3/4 of the way full while aging, and racks the spirit frequently, so there is lots of interaction with the air. As a result, I find his brandies will develop in complex and remarkable ways with time in the glass and time in the bottle, and you might even try decanting.
