Francois Chidaine is a producer with a zen approach. It shows in the beauty of his wines. Slow processes and supporting the natural harmony in their biodynamic vineyards and surrounding environment are key to their philosophy. They don't till the soil to avoid disrupting the network of natural organisms. Which in addition to creating healthy vines limits excess CO2 in the atmosphere. The fruits of these efforts go into this wondrous off-dry Chenin Blanc. All of its elements are in harmony. A honey-like texture and fresh acidity with pleasant candied fruits, white tea and jasmine on the palate. It's a generous partner with different ethnic cuisine. Particularly with some heat. Sensational with curry spices like turmeric, coriander, ginger, cumin, and cardamom.
