From Chenin Blanc vines up to 90 years of age on clay, flint, and limestone soil, this cuvée is named after its soil. Fermentation takes place in demi-muids over the course of 6 months, then aging in the same vessels for 9 months before bottling. Pair this off-dry white with Bun Cha.

Francois Chidaine makes AOC wines in Montlouis and Vouvray using some vanguard natural methods. He’s a rare winegrower that never plows between rows. Instead he plants native flora to coexist with the vines. The thought is healthy competition will help foster grapes of vitality. His entire estate is farmed biodynamically. Grapes are hand harvested and there is little added to the wines. Yet the wines are clean and classic. With his Montlouis Tuffeaux, Chidaine touches on the more sumptuous side of Chenin. The wine has impressive weight and an oily viscosity. The deep golden hue marks a sign of richness. There are flavors of honey nougat, cantaloupe, fresh fig, and nutmeg in there. It is off dry with a lift of mouth cleansing acidity. The fruit comes from 30-80 year vines which are planted on top of the Loire's soft limestone, Tuffeaux.
