Nama is always a good place to start with saké. Nama basically denotes that it is unpasteurized, therefore retaining some of the bright, fresh, and clean flavors. There are actually two points within the saké-making process where it can be pasteurized to make it more shelf stable. This nama gives you a glimpse of those flavors, and I am told that true nama, tasted in the spring in Japan, is heavenly.
