This is a single vineyard bottling, only produced in exquisite years. Vieille Vigne du Levant is made from the estate's oldest vines (60 to 80 years) from the village of Cramant. Levant references the sun rising on these east-facing vines planted on chalk and limestone soils. Primary fermentation took place in oak barrels.

From one of the first producers to bottle single-vineyard Champagne and to champion low dosage comes this absolute stunner of a vintage cuvée. Grapes are from the oldest Grand Cru vines in the village of Cramant (50-80 years old!), farmed biodynamically, and hand-harvested. The first impression is of profound yet delicate yeastiness: soft, fresh, doughy depths. Then comes caramel popcorn followed by ripe yellow apples, white mushroom, and raisin. Fermentation in used oak and up to 4 years lees aging give this beauty a rich, round texture, and the extremely low dosage of 2 g/L keeps it crisp and dry.
