Ah yes, the Aubry brothers! A dynamic duo out to prove that “Only big houses can produce great Champagne,” is a mantra that’s pure horseradish! Using only premier cru plots and indigenous (but widely forgotten) varietals, they create distinctive Champagne year after year. A bouquet fit for breakfast, warm biscuits and light honey with white flowers in a small vase. The palate is full of savory secondary fermentation notes, toasted sourdough, cracked pepper, and refreshing lemon zest. With a slam bang finish and acidity that’s just firecrackers.
