Mauzac, a grape variety that's virtually unheard of in the U.S., comes from the Gaillac region of southwest France. This rendition is sparkling and dry with floral aromas, raw honey and white pepper. This is loaded with character, thanks to the fact that it's unfiltered and made with indigenous yeasts. Store this bottle upright and drink with just a light chill. From Galliac in south central France comes this beautiful pétillant-naturel wine, made from the Mauzac grape. Galliac is the second oldest wine region in France and has had a wine AOC since 1938. Bernard Plageoles took over for his father Robert who had resurrected many indigenous varietals from extinction. Pétillant-naturel (or "pet-nat") wines are made with what's called the méthode ancestrale, an old way of making sparkling wine that predates the méthode champenoise by at least 200 years. Pet-nats capture the bubbles of the first fermentation. This wine has some nice yeasty notes on the nose and fine, delicate bubbles in the glass. It shows soft fruit without being sweet, and is complex without being busy or heavy. Enjoy with friends and food!
