This is a beautiful expression of white Burgundy, made entirely naturally, with no sulphur added at bottling. Every bottle is filled by human hand and nothing is ever added. The fruit is grown biodynamically and then carefully selected, pressed, fermented and aged in the cave of Chandon de Briailles in Savigny-lès-Beaune. Supple fruit, a viscous roundness, and lovely acidity make this wine simply a joy to true. It will pair well with a wide variety of cheeses, poultry in creamy sauces and would be excellent with robust vegetarian fare. Green almonds cooked with orange juice, onions, garlic, dill and good EVOO would be sublime. Lovers of Chardonnay take note, as this does not have any funk, but it does have spunk!
