Some of Ganevat's oldest Gamay vines (80+) make up this Beaujolais-meets-Jura blend. Using only indigenous yeasts, grapes undergo carbonic maceration in tronconic cuves over 5 weeks. Bottled after 10 months of aging unfined, unfiltered and without the addition of SO2.
