The Bricco Boschis, the family's monopole vineyard in the commune of Castiglione Falletto, is known for its calcareous clay soils. Cavallotto's wines are more traditional than most: He practices long maceration and ages in large Slovenian oak, rather than the small barriques that became a trend in the late 90s.

The most famous grape in Piedmont is the noble Nebbiolo, which makes the long-lived Barolo and Barbaresco.
